Sauteed Greens

This recipe works great with any greens (Kale, Turnip greens, Fava Greens, or any leafy greens)  If the greens have a large stalk remove it first.

Chop up:

  • one bunch of greens

Heat in a frying pan:

  • 2tbsp of olive oil
  • 3tbsp of water (add more as necessary)

Add:

  • Chopped Greens
  • Salt & Pepper to taste

Cook until the greens are nice and tender then toss with:

  • A little olive oil.

Also good with toasted sesame seeds or with oven roasted garlic squeezed in just before serving. Enjoy

Fava Green & Arugula Salad

Mix equal amounts of:

  • Torn or cut Fava Greens
  • Torn or cut Arugula

Add your favorite vinaigrette or make your own.

This can be done with either one by themselves or either can be replaced with a nice romaine lettuce. Enjoy

Fava Bean Puree

Shell

  • 2 pounds Fava Beans

Blanch the Fava Beans in boiling water for about a minute drain and plunge into ice water.  Once cool the beans should pop out of their shells quite nicely.

Heat:

  • 1/4 cup olive oil

Add

  • 3 cloves garlic diced
  • Fava Beans
  • salt
  • 1/4 cup water

Cook until nice and tender about 12 to 17 minutes then mash the beans up with a spoon or blend in a food procesor.

Add

  • A little olive oil

Serve and Enjoy.
